Ingredients
– 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
– 2 tablespoons olive oil
– 1 medium onion, sliced
– 3 cloves garlic, minced
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1/2 cup dry white wine
– 1/4 cup red wine vinegar
– 2 tablespoons capers, drained
– 2 tablespoons chopped fresh parsley
– 1 teaspoon dried oregano
– Salt and black pepper, to taste
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken and cook for 3-4 minutes per side, until browned. Transfer the chicken to a plate.
3. Reduce the heat to medium and add the onion to the skillet. Cook for 5 minutes, stirring occasionally, until softened.
4. Add the garlic and bell peppers to the skillet. Cook for 2-3 minutes, until the peppers start to soften.
5. Deglaze the skillet with the white wine, scraping up any browned bits from the bottom of the pan.
6. Stir in the red wine vinegar, capers, parsley, and oregano. Season with salt and black pepper to taste.
7. Return the chicken and any accumulated juices to the skillet. Simmer for 10-15 minutes, until the chicken is cooked through and the sauce has thickened.
8. Serve the Chicken Scarpariello immediately, garnished with additional parsley if desired.
Notes
This dish is best served over pasta, mashed potatoes, or crusty bread to soak up the delicious sauce. For a spicier version, you can add a pinch of red pepper flakes to the sauce. Leftovers will keep in the refrigerator for up to 4 days.
