Description

This Chicken Tzatziki Rice Bake is a delicious and healthy one-dish meal that combines juicy chicken, creamy tzatziki sauce, and fluffy rice for a flavor-packed, satisfying dinner.


Ingredients

– 1 lb boneless, skinless chicken breasts

– 1 cup plain Greek yogurt

– 1 cucumber, grated

– 3 cloves garlic, minced

– 2 tbsp fresh dill, chopped

– 1 tsp lemon juice

– 1 tsp salt

– 1/2 tsp black pepper

– 1 cup uncooked rice

– 1 cup water or chicken broth


Instructions

1. 1. Preheat oven to 400°F.

2. 2. In a large bowl, combine the yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Mix well.

3. 3. Add the chicken breasts and toss to coat them evenly in the tzatziki sauce.

4. 4. Spread the chicken and sauce in a baking dish. Bake for 25-30 minutes, or until the chicken is cooked through.

5. 5. Meanwhile, cook the rice according to package instructions.

Notes
