This Chicken Tzatziki Rice Bake is a delicious and healthy one-dish meal that combines juicy chicken, creamy tzatziki sauce, and fluffy rice for a flavor-packed, satisfying dinner.
Ingredients
– 1 lb boneless, skinless chicken breasts
– 1 cup plain Greek yogurt
– 1 cucumber, grated
– 3 cloves garlic, minced
– 2 tbsp fresh dill, chopped
– 1 tsp lemon juice
– 1 tsp salt
– 1/2 tsp black pepper
– 1 cup uncooked rice
– 1 cup water or chicken broth
Instructions
1. 1. Preheat oven to 400°F.
2. 2. In a large bowl, combine the yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Mix well.
