This Chicken Zucchini Stir Fry is a quick, easy, and delicious meal that’s perfect for busy weeknights. Tender chicken and crisp-tender zucchini are tossed in a savory, flavorful sauce for a satisfying and wholesome dinner.
Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 medium zucchini, sliced into 1/2-inch thick coins
– 2 tablespoons vegetable oil
– 3 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– 1/4 cup low-sodium soy sauce
– 2 tablespoons rice vinegar
– 1 tablespoon honey
– 1/4 teaspoon crushed red pepper flakes (optional)
– 2 green onions, sliced
– 1/4 cup chopped fresh cilantro (optional)
Instructions
1. In a large skillet or wok, heat the vegetable oil over high heat.
2. Add the chicken and stir-fry for 3-4 minutes, until no longer pink.
3. Add the zucchini and continue to stir-fry for 2-3 minutes, until the zucchini is crisp-tender.
4. Stir in the garlic and ginger and cook for 1 minute, until fragrant.
5. In a small bowl, whisk together the soy sauce, rice vinegar, and honey. Pour the sauce into the skillet and toss everything to coat.
6. Bring the sauce to a simmer and cook for 1-2 minutes, until slightly thickened.
7. Remove from heat and stir in the green onions and cilantro (if using).
8. Serve immediately over steamed rice or noodles.
Notes
– For a spicier dish, add more crushed red pepper flakes.
– Feel free to substitute other vegetables, such as bell peppers or snap peas, in place of the zucchini.
