Description

Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 2 cans (15 oz each) kidney beans, drained and rinsed

– 2 cans (15 oz each) pinto beans, drained and rinsed

– 1 can (28 oz) diced tomatoes

– 2 cups beef broth

– 2 tbsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– 1/2 tsp smoked paprika

– 1/4 tsp cayenne pepper (optional, for heat)

– Salt and pepper to taste


Instructions

1. – Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks. Drain any excess fat.

2. – Transfer the browned beef to a crockpot.

3. – Add the diced onion, minced garlic, kidney beans, pinto beans, diced tomatoes, and beef broth to the crockpot.

4. – Stir in the chili powder, cumin, oregano, smoked paprika, and cayenne pepper (if using).

5. – Season with salt and pepper to taste.

6. – Cover and cook on low for 5-6 hours, or on high for 3-4 hours, until the flavors are well-combined and the chili has thickened.

7. – Serve hot, with your favorite toppings such as shredded cheese, diced onions, and sour cream.

Notes

For a thicker chili, you can mash some of the beans against the side of the crockpot during the last 30 minutes of cooking. Adjust the spices to your desired level of heat. This chili also freezes well for future meals.
