Ingredients
– 12 ounces dark chocolate, chopped
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 3 large eggs
– 1/4 cup unsweetened cocoa powder, plus more for dusting
Instructions
1. In a medium saucepan, melt the chocolate and butter over low heat, stirring constantly until smooth. Remove from heat and let cool slightly.
2. In a large bowl, whisk together the sugar and eggs until well combined.
3. Gradually stir the chocolate mixture into the egg mixture until fully incorporated.
4. Fold in the 1/4 cup of cocoa powder until evenly distributed.
5. Lay a large sheet of parchment paper on a work surface. Scoop the chocolate mixture onto the center and shape it into a log or salami shape.
6. Wrap the parchment paper around the log and twist the ends to secure. Refrigerate for at least 2 hours, or until firm.
7. Remove the log from the refrigerator and unwrap. Dust the outside generously with additional cocoa powder.
8. Slice and serve the Chocolate Salami immediately, or store in the refrigerator for up to 1 week.
