Description

Ingredients
– 1 (14 oz) can artichoke hearts, drained and chopped
– 1/4 cup mayonnaise
– 2 tbsp lemon juice
– 1 celery stalk, diced
– 1/4 red onion, finely chopped
– Salt and pepper to taste
– 4 slices of bread
Instructions
1. – In a medium bowl, combine the chopped artichoke hearts, mayonnaise, lemon juice, celery, and red onion. Season with salt and pepper to taste.
2. – Mix well until all the ingredients are evenly coated.
3. – Spread the chopped artichoke salad mixture onto 2 slices of bread.
4. – Top with the remaining 2 slices of bread to create 2 sandwiches.
5. – Serve and enjoy!
Notes
– For a lighter option, use Greek yogurt instead of mayonnaise.
