Description

Indulge in the rich, moist texture of this easy, homemade Christmas Cake Roll. This delightful holiday treat is perfect for impressing your guests or satisfying your sweet tooth.

Ingredients

– 3 eggs

– 1/2 cup white sugar

– 1/3 cup all-purpose flour

– 1/4 cup unsweetened cocoa powder

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 1 (8 ounce) package cream cheese, softened

– 1/2 cup powdered sugar

– 1 teaspoon vanilla extract

Instructions

1. 1. Preheat oven to 375°F (190°C). Grease a 15×10 inch jelly roll pan and line with parchment paper.

2. 2. In a large bowl, beat the eggs with an electric mixer on high speed for 5 minutes until thick and lemon-colored. Gradually add in the white sugar and beat until well combined.

3. 3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

4. 4. Gently fold the dry ingredients into the egg mixture until just combined.

5. 5. Spread the batter evenly into the prepared jelly roll pan.

6. 6. Bake for 12-15 minutes, or until the cake springs back when lightly touched.

7. 7. Immediately turn the cake out onto a clean, damp kitchen towel dusted with powdered sugar. Carefully roll the cake up in the towel, starting from the short end. Allow to cool completely.

8. 8. In a medium bowl, beat the cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar and vanilla, beating until well combined.

9. 9. Carefully unroll the cooled cake and spread the cream cheese filling evenly over the surface. Re-roll the cake without the towel.

10. 10. Refrigerate the rolled cake for at least 1 hour before slicing and serving.

Notes

For a festive touch, you can dust the top of the cake roll with additional powdered sugar or garnish with fresh berries. This cake can be made a day in advance and stored in the refrigerator until ready to serve.
