Ingredients
– 1 cup (150g) mixed dried fruits (such as raisins, currants, cranberries, and apricots)
– 1/2 cup (120ml) brandy or orange juice
– 1 cup (200g) unsalted butter, softened
– 1 cup (200g) brown sugar
– 4 large eggs
– 2 cups (250g) all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– 1/4 teaspoon salt
– 1/2 cup (60g) chopped walnuts or pecans (optional)
Instructions
1. 1. Preheat your oven to 350°F (180°C). Grease and flour a 9-inch (23cm) round cake pan.
2. 2. In a small saucepan, combine the mixed dried fruits and brandy (or orange juice). Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally, until the fruits have plumped up. Remove from heat and let cool.
3. 3. In a large mixing bowl, cream the butter and brown sugar together until light and fluffy. Beat in the eggs, one at a time, until well combined.
4. 4. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt.
5. 5. Gradually add the dry ingredients to the butter mixture, mixing just until combined. Fold in the cooled dried fruit mixture and the chopped nuts (if using).
