Ingredients
– 2 cups all-purpose flour
– 2 tablespoons granulated sugar
– 1 teaspoon baking powder

– 2 large eggs

– 4 tablespoons unsalted butter, melted

Instructions
1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
2. In a separate bowl, beat the eggs. Then, stir in the milk, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and whisk until just combined (do not overmix).
4. Preheat your waffle iron and grease it if necessary. Scoop the batter onto the hot waffle iron and cook until golden brown and crispy, about 5-7 minutes.
5. Remove the churro waffles from the iron and place them on a wire rack to cool slightly.
6. In a double boiler or microwave, melt the chopped Mexican chocolate, stirring occasionally until smooth.
