Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup peeled and diced apples
– 2 tablespoons brown sugar
Instructions
1. – Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and set aside.
2. – In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.
3. – In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
4. – Gradually fold the dry ingredients into the wet ingredients until just combined. Gently fold in the diced apples.
5. – In a small bowl, mix together the brown sugar and remaining 1 teaspoon of cinnamon for the swirl topping.
6. – Spoon half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture. Top with the remaining batter and the remaining cinnamon-sugar mixture. Use a knife to swirl the topping through the batter.
7. – Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
– For a more pronounced apple flavor, use a combination of tart and sweet apples.
