Description

Discover the secret to making a delicious, classic Borscht Soup in just 30 minutes! This vibrant, beet-based soup is packed with nutrients and perfect for chilly winter days.

Ingredients

– 4 medium beets, peeled and diced

– 1 medium onion, diced

– 3 cloves garlic, minced

– 1 medium head of cabbage, shredded

– 4 cups vegetable or beef broth

– 2 tablespoons apple cider vinegar

– 1 tablespoon honey

– 1 teaspoon caraway seeds

– Salt and pepper to taste

– Sour cream and fresh dill for serving

Instructions

1. 1. In a large pot, sauté the onions and garlic in a bit of oil over medium heat until translucent, about 5 minutes.

2. 2. Add the diced beets, shredded cabbage, broth, vinegar, honey, and caraway seeds. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the beets are tender.

3. 3. Season with salt and pepper to taste.

4. 4. Serve hot, garnished with a dollop of sour cream and fresh dill.

Notes

For a heartier meal, serve with crusty bread or a salad. You can also add cooked potatoes or beans to the soup. Leftover borscht keeps well in the fridge for up to 5 days.
