Description

Ingredients

– 1 cup yellow lentils (toor dal), rinsed

– 3 cups fresh spinach, chopped

– 1 onion, diced

– 3 cloves garlic, minced

– 1 inch ginger, grated

– 1 teaspoon cumin seeds

– 1 teaspoon coriander powder

– 1 teaspoon garam masala

– 1/2 teaspoon turmeric powder

– 1/4 teaspoon red chili powder (or to taste)

– 2 tablespoons oil

– Salt to taste

– Chopped cilantro for garnish


Instructions

1. Soak the lentils in water for 30 minutes, then drain and set aside.

2. Heat oil in a saucepan over medium heat. Add the cumin seeds and let them sizzle for 30 seconds.

3. Add the diced onion and sauté until translucent, about 5 minutes.

4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.

5. Add the soaked and drained lentils, along with 3 cups of water. Bring to a boil.

6. Reduce heat to medium-low, cover and simmer for 15-20 minutes, stirring occasionally, until the lentils are tender.

7. Add the chopped spinach, coriander powder, garam masala, turmeric, and red chili powder. Season with salt to taste.

8. Simmer for 5 more minutes, stirring frequently, until the spinach is wilted and the flavors have blended.

9. Serve hot, garnished with chopped cilantro. Enjoy with warm naan bread.

Notes

For a thicker consistency, you can blend a portion of the cooked lentils before adding the spinach. This dal also freezes well for meal prep.
