Ingredients
– 1/2 cup chia seeds
– 2 cups full-fat coconut milk
– 1/4 cup maple syrup
– 1 teaspoon vanilla extract
– 1/4 teaspoon sea salt
– Toasted coconut flakes, fresh berries, and mint leaves for garnish
Instructions
1. – In a medium bowl, whisk together the chia seeds, coconut milk, maple syrup, vanilla, and sea salt until well combined.
2. – Cover and refrigerate for at least 30 minutes, or up to 5 days, stirring occasionally, until thickened to a pudding-like consistency.
3. – Divide the coconut chia pudding into individual serving bowls or jars.
4. – Top with toasted coconut flakes, fresh berries, and a sprig of mint.
5. – Serve chilled and enjoy!
Notes
For a thicker pudding, use 3/4 cup chia seeds. This recipe can also be made with unsweetened almond milk or oat milk in place of coconut milk. Leftovers will keep in the refrigerator for up to 5 days.
