Ingredients
– 2 cups old-fashioned rolled oats
– 1 1/2 cups unsweetened coconut milk
– 1/4 cup unsweetened shredded coconut
– 1/2 cup fresh or dried cranberries
– 2 tablespoons honey
– 1 teaspoon vanilla extract
Instructions
1. In a large bowl, combine the rolled oats, coconut milk, shredded coconut, cranberries, honey, and vanilla extract. Stir until well combined.
2. Cover the bowl and refrigerate for at least 4 hours, or overnight.
3. When ready to serve, give the overnight oats a stir and scoop into bowls. Top with additional shredded coconut, fresh cranberries, or a drizzle of honey, if desired.
Notes
For a thicker consistency, use less coconut milk. For a creamier texture, use more coconut milk. This recipe can also be made with other types of milk or plant-based milk alternatives.
