Description

Coconut Rum Snow Squares are a decadent, no-bake treat that combines the rich, creamy flavors of coconut and rum. These bite-sized squares are easy to make and perfect for parties, holidays, or anytime you need a taste of the tropics.


Ingredients

– 8 ounces cream cheese, softened

– 1/2 cup powdered sugar

– 2 tablespoons dark rum

– 1 1/2 cups sweetened shredded coconut

– 1/4 cup additional powdered sugar for dusting


Instructions

1. In a medium bowl, beat the cream cheese with an electric mixer until smooth and creamy.

2. Add the 1/2 cup of powdered sugar and rum, and mix until well combined.

3. Fold in the shredded coconut until evenly distributed.

4. Line a baking sheet with parchment paper. Scoop the coconut mixture by the tablespoonful and roll into balls, then place them on the prepared baking sheet.

5. Chill the coconut rum balls in the refrigerator for at least 30 minutes.

6. Remove the chilled balls and dust them generously with the additional 1/4 cup of powdered sugar.

7. Serve the Coconut Rum Snow Squares chilled and enjoy!

Notes

For a fun twist, try rolling the chilled balls in toasted coconut or drizzling them with melted white chocolate before dusting with powdered sugar. These squares can be stored in an airtight container in the refrigerator for up to 1 week.
