Ingredients
– 2 cups (250g) all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup (230g) unsalted butter, softened
– 1 cup (200g) granulated sugar
– 1 large egg
– 2 tablespoons brewed coffee, cooled
– 1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy, about 2-3 minutes.
4. Beat in the egg, followed by the cooled brewed coffee and vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined, being careful not to overmix.
6. Scoop tablespoon-sized balls of dough and place them about 2 inches apart on the prepared baking sheet.
7. Bake for 12-15 minutes, or until the cookies are lightly golden around the edges.
8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a deeper coffee flavor, you can substitute 1 tablespoon of the brewed coffee with 1 tablespoon of instant coffee powder dissolved in 1 tablespoon of hot water.
