Ingredients
– 8 ounces linguine or spaghetti, cooked according to package instructions and chilled
– 1 red bell pepper, thinly sliced
– 2 carrots, julienned or shredded
– 3 green onions, sliced
– 1/2 cup chopped fresh cilantro
– 1/4 cup chopped roasted peanuts (optional)
– For the Peanut Dressing:
– 1/4 cup creamy peanut butter
– 2 tablespoons soy sauce
– 2 tablespoons rice vinegar
– 1 tablespoon honey
– 1 tablespoon sesame oil
– 1 teaspoon grated ginger
– 1 clove garlic, minced
– 2-3 tablespoons water, as needed to thin the dressing
Instructions
1. In a large bowl, combine the cooked and chilled noodles, red bell pepper, carrots, green onions, and cilantro.
2. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic. Add 2-3 tablespoons of water to thin the dressing to your desired consistency.
3. Pour the peanut dressing over the noodle and vegetable mixture and toss gently to coat evenly.
4. Garnish with chopped roasted peanuts, if desired.
5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
