Ingredients
– 2 cups all-purpose flour
– 1 cup unsalted butter, chilled and cubed
– 1/2 cup granulated sugar
– 1 teaspoon salt
– 6-8 Granny Smith apples, peeled, cored, and sliced
– 1 cup brown sugar
– 2 teaspoons ground cinnamon
– 1/2 teaspoon ground nutmeg
– 2 tablespoons cornstarch
Instructions
1. 1. In a food processor, combine the flour, butter, granulated sugar, and salt. Pulse until the mixture resembles coarse crumbs.
2. 2. Gradually add 2-3 tablespoons of ice water and pulse until the dough just begins to come together. Do not overmix.
3. 3. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
4. 4. Preheat the oven to 375°F (190°C).
5. 5. In a large bowl, toss the apple slices with the brown sugar, cinnamon, nutmeg, and cornstarch until well coated.
6. 6. Roll out one disk of dough to fit a 9-inch deep-dish pie plate. Press the dough into the plate and trim any excess.
7. 7. Spoon the apple mixture into the prepared crust.
8. 8. Roll out the remaining dough and place it over the filling. Crimp the edges to seal and cut slits in the top to allow steam to escape.
9. 9. Bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
10. 10. Allow the pie to cool completely before slicing and serving.
Notes
For a flakier crust, you can use a combination of butter and shortening. You can also add a teaspoon of vanilla extract to the apple filling for extra flavor. Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra-special treat.
