Ingredients
– 2 cups fresh corn kernels (about 4 ears of corn)
– 2 cups heavy cream
– 1 cup whole milk
– 3/4 cup granulated sugar
– 1 teaspoon vanilla extract
Instructions
1. 1. In a medium saucepan, combine the corn kernels, cream, and milk. Bring the mixture to a simmer over medium heat, stirring occasionally, until the corn is tender, about 10 minutes.
2. 2. Remove the saucepan from the heat and let the mixture cool slightly. Transfer the contents to a blender and blend until smooth.
3. 3. Strain the mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids.
4. 4. Stir in the sugar and vanilla extract until the sugar has dissolved.
5. 5. Cover and refrigerate the mixture for at least 2 hours, or until completely chilled.
6. 6. Process the chilled mixture in an ice cream maker according to the manufacturer’s instructions, about 20-25 minutes.
7. 7. Transfer the churned ice cream to an airtight container and freeze for at least 2 hours before serving.
Notes
For a creamier texture, you can substitute half-and-half for the whole milk. You can also add a pinch of salt to enhance the sweetness of the corn.
