Description

Ingredients

– 4 Cornish hens

– 2 cups cooked white rice

– 1 cup diced apples

– 1/2 cup dried cranberries

– 1/4 cup chopped fresh parsley

– 2 tablespoons butter, melted

– 1 teaspoon ground sage

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 400°F.

2. In a medium bowl, combine the cooked rice, diced apples, dried cranberries, parsley, melted butter, sage, salt, and pepper. Mix well.

3. Carefully loosen the skin of the Cornish hens and stuff the rice mixture evenly under the skin.

4. Place the stuffed Cornish hens in a baking dish and roast for 30-35 minutes, or until the hens are cooked through and the skin is crispy.

5. Serve the Cornish hens warm, spooning any extra stuffing from the baking dish over the top.

Notes

For a more intense flavor, you can add a teaspoon of fresh thyme or rosemary to the stuffing mixture. Leftover Cornish hens can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
