Description

Ingredients

– 1 cup low-fat cottage cheese

– 4 whole wheat tortillas

– 1 cup baby spinach or arugula

– 1/4 cup diced cucumber

– 2 tablespoons chopped fresh herbs (such as parsley, dill, or chives)

– Salt and pepper to taste


Instructions

1. 1. Spread 1/4 cup of cottage cheese evenly onto each tortilla.

2. 2. Top with a handful of spinach or arugula, a few pieces of diced cucumber, and a sprinkle of chopped fresh herbs.

3. 3. Season with salt and pepper to taste.

4. 4. Carefully roll up the tortilla, starting from one side and tucking in the ends as you go.

5. 5. Slice the wrapped tortillas in half diagonally, if desired, and serve.

Notes

For extra flavor, try adding a drizzle of balsamic glaze or a sprinkle of grated Parmesan cheese on top of the cottage cheese. These wraps can also be made ahead of time and stored in the refrigerator for up to 3 days.
