Cowboy Cabbage is a delicious and easy-to-make side dish that’s perfect for weeknight dinners. This hearty, savory cabbage recipe is loaded with flavor from bacon, onions, and spices, making it a comforting and satisfying vegetable accompaniment.
Ingredients
– 1 head green cabbage, shredded
– 1 onion, diced
– 3 cloves garlic, minced
– 4 slices bacon, diced
– 2 tablespoons olive oil
– 1 teaspoon paprika
– 1/2 teaspoon dried thyme
– 1/4 teaspoon cayenne pepper (optional)
– Salt and pepper to taste
Instructions
1. 1. In a large skillet or Dutch oven, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the bacon fat in the pan.
2. 2. Add the olive oil and diced onions to the pan. Sauté for 3-5 minutes, until the onions are translucent.
3. 3. Add the minced garlic and continue cooking for 1 minute, until fragrant.
4. 4. Add the shredded cabbage to the pan and toss to coat with the onion and garlic mixture. Season with paprika, thyme, cayenne (if using), salt, and pepper.
5. 5. Cook the cabbage, stirring occasionally, for 10-15 minutes or until it’s tender and lightly caramelized.
6. 6. Remove the pan from the heat and stir in the reserved crispy bacon.
7. 7. Serve hot as a side dish.
Notes
For a heartier meal, you can add diced cooked chicken or pork to the Cowboy Cabbage. This dish also reheats well and can be made in advance.
