Description
Cowboy Caviar (also known as Texas Caviar) is a vibrant and flavorful dip made with a variety of fresh vegetables, beans, and a tangy dressing. It’s the perfect appetizer for parties, game days, or any time you need a crowd-pleasing dip.
Ingredients
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can corn, drained
– 1 cup diced tomatoes
– 1/2 cup diced red onion
– 1/2 cup diced bell pepper (any color)
– 1/4 cup chopped fresh cilantro
– 2 tablespoons lime juice
– 2 tablespoons olive oil
– 1 teaspoon chili powder
– 1/2 teaspoon garlic powder
– 1/4 teaspoon ground cumin
– Salt and pepper to taste
Instructions
1. In a large bowl, combine the black beans, corn, diced tomatoes, red onion, bell pepper, and cilantro.
2. In a small bowl, whisk together the lime juice, olive oil, chili powder, garlic powder, and cumin.
3. Pour the dressing over the vegetable mixture and stir to coat everything evenly.
4. Season with salt and pepper to taste.
5. Chill the Cowboy Caviar dip in the refrigerator for at least 30 minutes to allow the flavors to meld.
6. Serve the dip chilled with tortilla chips, crackers, or as a topping for tacos or burritos.
Notes
– For a creamier dip, you can add a small amount of sour cream or Greek yogurt.
– Customize the vegetables to your liking – add diced avocado, jalapeño, or swap out the bell pepper for something else.
– This dip can be made ahead of time and stored in the refrigerator for up to 5 days.
