Ingredients
– 1 lb beef chuck, cubed
– 1 onion, diced
– 3 cloves garlic, minced
– 2 cans diced tomatoes
– 1 can kidney beans, drained and rinsed
– 1 can pinto beans, drained and rinsed
– 4 cups beef broth
– 2 tbsp chili powder
– 1 tsp cumin
– 1 tsp oregano
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, brown the beef over medium-high heat until no longer pink.
2. – Add the onion and garlic, and sauté until fragrant and translucent.
3. – Pour in the diced tomatoes, kidney beans, pinto beans, and beef broth. Stir in the chili powder, cumin, and oregano.
4. – Bring the soup to a boil, then reduce heat and simmer for 30 minutes, or until the beef is tender.
5. – Season with salt and pepper to taste.
6. – Serve the Cowboy Soup hot, garnished with fresh herbs if desired.
Notes
For a thicker soup, you can mash some of the beans against the side of the pot. You can also add in diced potatoes or corn for extra heartiness. This soup freezes well, so feel free to make a double batch and enjoy it later.
