Ingredients

– 4 salmon fillets (about 6 oz each)

– 1 cup lump crab meat, drained and picked over for shells

– 1/4 cup panko breadcrumbs

– 2 tablespoons mayonnaise

– 1 tablespoon Dijon mustard

– 1 tablespoon chopped fresh parsley

– 1 teaspoon lemon zest

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat your oven to 400°F (200°C).

2. In a medium bowl, combine the crab meat, panko breadcrumbs, mayonnaise, Dijon mustard, parsley, lemon zest, salt, and pepper. Mix well until the ingredients are evenly distributed.

3. Cut a deep pocket into the side of each salmon fillet, being careful not to cut all the way through.

4. Stuff the crab mixture evenly into the pockets of the salmon fillets.

5. Place the stuffed salmon fillets on a baking sheet lined with parchment paper or a silicone baking mat.

6. Bake the salmon for 15-20 minutes, or until the salmon is cooked through and the crab filling is hot and bubbly.

7. Serve the Crab-Stuffed Salmon Fillets immediately, garnished with fresh parsley or lemon wedges if desired.

Notes

For a crispy topping, you can sprinkle the stuffed salmon fillets with additional panko breadcrumbs before baking. Leftover crab-stuffed salmon can be refrigerated for up to 3 days and reheated in the oven or microwave.
