Ingredients
– 3-4 lb beef roast (such as chuck, ribeye, or top round)
– 1 cup fresh or frozen cranberries
– 1/2 cup balsamic vinegar
– 3 cloves garlic, minced
– 2 tbsp brown sugar
– 1 tsp dried thyme
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. Preheat oven to 325°F.
2. In a small bowl, combine the cranberries, balsamic vinegar, garlic, brown sugar, thyme, salt, and pepper.
3. Place the beef roast in a large roasting pan or baking dish. Pour the cranberry-balsamic mixture over the top, making sure to coat the roast evenly.
4. Roast the beef for 2-2.5 hours, or until it reaches your desired level of doneness (medium-rare to well-done).
5. Baste the roast with the cranberry-balsamic sauce every 30 minutes during cooking.
6. Remove the roast from the oven and let it rest for 10-15 minutes before slicing and serving.
