Description

Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, softened

– 1/2 cup granulated sugar

– 1/4 teaspoon salt

– 1 cup fresh or frozen cranberries

– 1 cup granulated sugar

– 2 large eggs

– 2 tablespoons cornstarch

– 1 tablespoon lemon juice

– Powdered sugar for dusting


Instructions

1. Preheat the oven to 375°F. Grease an 8×8-inch baking pan.

2. In a food processor, pulse the flour, butter, 1/2 cup sugar, and salt until it resembles coarse crumbs. Press the mixture into the prepared pan.

3. Bake for 18-20 minutes, until lightly golden. Allow to cool completely.

4. In a saucepan, combine the cranberries, 1 cup sugar, eggs, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until thickened, about 10 minutes.

5. Spread the cranberry curd over the cooled crust.

6. Bake for an additional 20-25 minutes, until the center is set. Allow to cool completely before cutting into bars.

7. Dust the bars with powdered sugar before serving.

Notes

For best results, use fresh cranberries. Frozen cranberries can also be used, but may have a slightly different texture. These bars can be stored in an airtight container in the refrigerator for up to 5 days.
