Description

Indulge in the perfect balance of tart and sweet with these irresistible Cranberry Lemon Bars. The buttery crust and jammy cranberry filling create a delightful flavor combination that’s perfect for any occasion.

Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 large eggs

– 2 tablespoons lemon zest

– 2 tablespoons lemon juice

– 1 1/2 cups all-purpose flour

– 1/4 teaspoon salt

– 2 cups fresh or frozen cranberries

Instructions

1. 1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.

2. 2. In a large bowl, cream together the butter and sugar until light and fluffy.

3. 3. Beat in the eggs, one at a time, then stir in the lemon zest and juice.

4. 4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. 5. Spread the dough evenly into the prepared baking pan.

6. 6. Sprinkle the cranberries over the top of the dough.

7. 7. Bake for 30-35 minutes, or until the crust is golden brown and the cranberries are bubbly.

8. 8. Allow the bars to cool completely before cutting into squares.

Notes

For a more tart flavor, increase the amount of lemon juice. You can also try using a combination of cranberries and raspberries for a slightly sweeter twist.
