Description

This Cream Of Broccoli Soup Recipe is a comforting and nutritious dish that’s perfect for a cozy meal. Made with fresh broccoli, simmered in a creamy broth and blended to a velvety texture, this soup is both satisfying and bursting with fresh flavor.

Ingredients

– 2 tbsp olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chopped broccoli florets

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 1 tsp salt

– 1/2 tsp black pepper

Instructions

1. 1. In a large saucepan, heat the olive oil over medium heat.

2. 2. Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant.

3. 3. Add the chopped broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the broccoli is very tender.

4. 4. Carefully transfer the soup to a blender and blend until smooth and creamy.

5. 5. Return the blended soup to the saucepan and stir in the heavy cream. Heat through, but do not boil.

6. 6. Season with salt and black pepper to taste.

7. 7. Serve hot, garnished with extra broccoli florets, croutons, or a drizzle of olive oil, if desired.

Notes

– For a vegan version, substitute the heavy cream with full-fat coconut milk.

– Add a sprinkle of grated parmesan cheese or crumbled bacon for extra flavor.

– This soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
