Ingredients

– 8 ounces lasagna noodles, broken into 1-inch pieces

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 1 cup freshly grated parmesan cheese, plus more for serving

– 3 cloves garlic, minced

– 1 teaspoon dried basil

– 1/2 teaspoon dried oregano

– 1/4 teaspoon ground nutmeg

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot or Dutch oven, bring the broth to a simmer over medium heat.

2. 2. Add the broken lasagna noodles and cook for 10-12 minutes, or until the noodles are tender.

3. 3. Reduce the heat to low and stir in the heavy cream, parmesan cheese, garlic, basil, oregano, and nutmeg. Season with salt and pepper to taste.

4. 4. Simmer the soup for 5-7 minutes, stirring occasionally, until the cheese has melted and the flavors have combined.

Notes

For a thicker soup, you can add more parmesan cheese or a small amount of cornstarch or flour to the mixture. Leftovers can be stored in the refrigerator for up to 4 days.
