Tender, flaky salmon fillets baked in a rich and creamy garlic butter sauce, paired with sautéed spinach and mushrooms for a delicious and nutritious meal.
Ingredients
– 4 salmon fillets
– 4 tbsp unsalted butter
– 3 cloves garlic, minced
– 1 cup baby spinach
– 8 oz sliced mushrooms
– 1 tsp dried thyme
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Preheat oven to 400°F.
2. 2. In a large oven-safe skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
3. 3. Season the salmon fillets with salt and pepper, then place them in the skillet. Spoon the garlic butter over the top of the salmon.
4. 4. Transfer the skillet to the oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
5. 5. Remove the skillet from the oven and add the spinach and mushrooms. Sauté for 2-3 minutes until the spinach is wilted and the mushrooms are tender.
6. 6. Serve the creamy garlic butter salmon immediately, spooning the sautéed spinach and mushrooms over the top.
Notes
This dish can be served with roasted potatoes, rice, or a fresh salad for a complete and satisfying meal. For a creamier sauce, add a splash of heavy cream or half-and-half to the garlic butter.
