Description

Indulge in the irresistible flavors of this Creamy Pumpkin Chia Pudding! A healthy, high-protein treat that’s perfect for breakfast, dessert, or a snack. Packed with fiber, nutrients, and a silky smooth texture.

Ingredients

– 1 cup unsweetened almond milk

– 1/2 cup canned pumpkin puree

– 3 tablespoons chia seeds

– 2 tablespoons maple syrup

– 1 teaspoon vanilla extract

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

Instructions

1. – In a medium bowl, whisk together the almond milk, pumpkin puree, chia seeds, maple syrup, vanilla, cinnamon, and nutmeg until well combined.

2. – Cover and refrigerate for at least 2 hours, or overnight, stirring occasionally, until thickened.

3. – Divide the chia pudding into individual serving bowls or jars.

4. – Top with your desired garnishes, such as toasted coconut flakes, chopped nuts, a drizzle of honey, and a sprinkle of cinnamon.

5. – Enjoy chilled.

Notes

– For a thicker pudding, use 1/4 cup more chia seeds.

– Customize the toppings to your liking – crushed graham crackers, toasted pepitas, or a dollop of whipped cream would also be delicious.

– The chia pudding can be made up to 5 days in advance and stored in the refrigerator.
