Description

Cozy up with a bowl of this Creamy Tortellini and Spinach Soup – a comforting 30-minute meal packed with tender tortellini, fresh spinach, and a rich, velvety broth.


Ingredients

– 1 tablespoon olive oil

– 1 onion, diced

– 3 garlic cloves, minced

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 1 pound cheese tortellini

– 5 ounces fresh spinach, chopped

– 1/2 cup grated Parmesan cheese

– 1 teaspoon dried thyme

– Salt and pepper to taste


Instructions

1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until softened.

2. Add the minced garlic and cook for 1 minute, until fragrant.

3. Pour in the broth and heavy cream. Bring the mixture to a simmer.

4. Add the tortellini and cook for 8-10 minutes, until the tortellini is tender.

5. Stir in the chopped spinach and cook for 2-3 minutes, until the spinach is wilted.

6. Remove from heat and stir in the grated Parmesan and dried thyme. Season with salt and pepper to taste.

7. Serve the creamy tortellini and spinach soup warm, garnished with extra Parmesan, croutons, or a drizzle of olive oil if desired.

Notes

– For a vegetarian version, use vegetable broth instead of chicken broth.
