Ingredients
– 1 pound boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1/2 cup sun-dried tomatoes, chopped
– 2 cups fresh spinach, chopped
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1/2 teaspoon dried basil
– Salt and pepper to taste
Instructions
1. Season the chicken breasts with salt and pepper.
2. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken and sear for 3-4 minutes per side until golden brown.
3. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the heavy cream, Parmesan cheese, sun-dried tomatoes, spinach, garlic, oregano, and basil. Whisk to combine and bring the mixture to a simmer.
5. Return the chicken to the skillet and spoon the creamy sauce over the top.
6. Transfer the skillet to the oven and bake at 400°F for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
