Description
Crispy, golden-brown chicken taquitos are a delicious and easy-to-make appetizer or main dish. Filled with juicy shredded chicken, melted cheese, and seasoned with bold spices, these taquitos are sure to be a crowd-pleaser.
Ingredients
– 2 cups cooked, shredded chicken
– 1 cup shredded Cheddar cheese
– 1 teaspoon cumin
– 1 teaspoon chili powder
– 1/2 teaspoon garlic powder
– 1/4 teaspoon salt
– 12 small flour tortillas
– Vegetable oil for frying
Instructions
1. In a medium bowl, combine the shredded chicken, Cheddar cheese, cumin, chili powder, garlic powder, and salt. Mix well.
2. Place a tortilla on a flat surface and spoon 2-3 tablespoons of the chicken mixture onto the center. Fold the sides of the tortilla over the filling and roll it up tightly.
3. In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. Carefully add the taquitos, seam-side down, and fry for 2-3 minutes per side, or until golden brown and crispy.
4. Transfer the fried taquitos to a paper towel-lined plate to drain excess oil.
5. Serve the crispy chicken taquitos warm, with your favorite dipping sauces, such as salsa, guacamole, or sour cream.
Notes
For a healthier option, you can bake the taquitos instead of frying. Preheat the oven to 400°F (200°C) and bake the taquitos for 15-20 minutes, or until crispy.
