Ingredients
– 4 boneless, skinless chicken thighs
– 1 cup all-purpose flour
– 1 cup panko breadcrumbs
– 2 tablespoons lemon pepper seasoning
– 1 teaspoon salt
– 2 eggs, beaten
– Vegetable oil for frying
– 4 brioche buns, toasted
– Lemon wedges, for serving
Instructions
1. 1. Pat the chicken thighs dry with paper towels and season both sides with lemon pepper seasoning and salt.
2. 2. Set up a breading station with the flour, beaten eggs, and panko breadcrumbs in separate shallow dishes.
3. 3. Dredge the chicken thighs in the flour, dip in the egg, and then coat with the panko breadcrumbs, pressing to adhere.
4. 4. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat. Fry the chicken thighs for 3-4 minutes per side, or until golden brown and cooked through.
5. 5. Drain the fried chicken on a paper towel-lined plate.
6. 6. Assemble the sandwiches by placing a fried chicken thigh on each toasted bun. Serve immediately with lemon wedges.
Notes
For a healthier option, you can bake the breaded chicken thighs at 400°F for 20-25 minutes instead of frying. The chicken can also be prepared ahead of time and reheated before assembling the sandwiches.
