Ingredients
– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
– 4 cups low-sodium chicken broth
– 1 (13.5 oz) can full-fat coconut milk
– 2 stalks lemongrass, bruised and cut into 3-inch pieces
– 2 inches fresh ginger, peeled and sliced
– 2 cloves garlic, minced
– 1 tablespoon fish sauce
– 1 tablespoon lime juice
– 1 teaspoon brown sugar
– 1/4 teaspoon red pepper flakes (optional)
– 1/4 cup chopped fresh cilantro, plus more for garnish
– Salt and pepper to taste
Instructions
1. In a slow cooker, combine the chicken, chicken broth, coconut milk, lemongrass, ginger, garlic, fish sauce, lime juice, brown sugar, and red pepper flakes (if using).
2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
3. Remove the lemongrass pieces. Stir in the chopped cilantro and season with salt and pepper to taste.
4. Serve the Crock Pot Thai Ginger Chicken Soup hot, garnished with additional cilantro and a squeeze of lime juice.
Notes
This soup can be made ahead of time and reheated when ready to serve. The flavors will deepen as it sits. For a thicker soup, you can blend a portion of the soup or add a cornstarch slurry towards the end of cooking.
