Description

Crockpot Taco Soup is a hearty and delicious one-pot meal that’s perfect for busy weeknights. This comforting soup is loaded with ground beef, beans, corn, and a zesty taco seasoning, making it a family-friendly favorite.


Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 packet taco seasoning

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can pinto beans, drained and rinsed

– 1 (15 oz) can corn, drained

– 1 (14.5 oz) can diced tomatoes

– 4 cups beef broth

– Salt and pepper to taste


Instructions

1. – In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain excess fat.

2. – Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes until fragrant.

3. – Transfer the ground beef mixture to a crockpot.

4. – Add the taco seasoning, black beans, pinto beans, corn, diced tomatoes, and beef broth. Stir to combine.

5. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors are well-combined.

6. – Season with salt and pepper to taste.

7. – Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, diced avocado, and fresh cilantro.

Notes

For a thicker soup, you can mash some of the beans against the side of the crockpot. You can also add diced bell peppers or jalapeños for extra flavor and heat.
