Description

Indulge in the ultimate breakfast or brunch delight with these Croque Madame Waffles. Fluffy waffles are topped with savory ham, melted Gruyère cheese, and a rich béchamel sauce, then finished with a perfectly cooked fried egg for a decadent twist on the classic French dish.

Ingredients

– 2 cups all-purpose flour

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 2 eggs

– 1 1/2 cups milk

– 4 tablespoons unsalted butter, melted

– 8 slices of ham

– 8 ounces Gruyère cheese, grated

– 2 tablespoons unsalted butter

– 2 tablespoons all-purpose flour

– 1 cup milk

– 1/4 teaspoon nutmeg

– 1/4 teaspoon white pepper

– 6 eggs, fried

Instructions

– Preheat your waffle iron and lightly grease it.

– In a large bowl, whisk together the flour, baking powder, and salt.

– In a separate bowl, beat the eggs and then whisk in the milk and melted butter.

– Pour the wet ingredients into the dry ingredients and whisk until just combined, being careful not to overmix.

– Pour the batter onto the preheated waffle iron and cook until golden brown and crispy, about 5 minutes.

– In a small saucepan, melt the 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 2 minutes.

– Gradually whisk in the 1 cup of milk and cook, stirring constantly, until the sauce thickens, about 5 minutes. Season with nutmeg and white pepper.

– To assemble, place a waffle on a plate and top with a slice of ham, a generous sprinkle of Gruyère cheese, and a ladle of the béchamel sauce.

– Top with a fried egg and serve immediately.

Notes

For a crispy top, you can briefly broil the assembled waffles before topping with the fried egg. Swap out the ham for cooked bacon or Canadian bacon, if desired.
