Description

Indulge in the authentic flavors of Cuba with this easy and mouthwatering Cuban Casserole. Made with seasoned ground beef, bell peppers, and a blend of melted cheeses, this family-style dish is sure to become a new favorite.


Ingredients

– 1 pound ground beef

– 1 onion, diced

– 2 bell peppers, diced

– 3 cloves garlic, minced

– 1 (15 oz) can tomato sauce

– 1 cup cooked white rice

– 1 teaspoon cumin

– 1 teaspoon oregano

– 1/2 teaspoon paprika

– Salt and pepper to taste

– 1 1/2 cups shredded Cheddar and Monterey Jack cheese


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large skillet, cook the ground beef over medium-high heat until browned and crumbled, about 5-7 minutes.

3. Add the diced onion and bell peppers to the skillet. Cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.

4. Stir in the minced garlic and cook for an additional minute.

5. Pour in the tomato sauce and add the cumin, oregano, paprika, salt, and pepper. Stir to combine.

6. Fold in the cooked white rice and mix well.

7. Transfer the beef and rice mixture to a 9×13 inch baking dish. Top with the shredded cheese.

8. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

9. Serve hot and enjoy!

Notes

This Cuban Casserole can be made ahead of time and refrigerated until ready to bake. It also freezes well for future meals. Feel free to experiment with different cheese blends or add your favorite toppings, such as sliced olives or diced jalapeños.
