Ingredients
– 12 hard-boiled eggs
– 1/2 cup mayonnaise
– 2 tablespoons Dijon mustard
– 1 teaspoon paprika, plus more for garnish
– 2 tablespoons finely chopped chives, plus more for garnish
– 1 cup panko breadcrumbs
– Vegetable oil for frying
Instructions
1. – Carefully slice the hard-boiled eggs in half lengthwise and scoop out the yolks into a medium bowl.
2. – Add the mayonnaise, mustard, 1 teaspoon of paprika, and 2 tablespoons of chopped chives to the yolks. Mash and mix until smooth and creamy.
3. – Spoon or pipe the yolk mixture back into the egg white halves.
4. – Pour the panko breadcrumbs into a shallow bowl. Gently dredge the filled egg halves in the breadcrumbs, pressing lightly to adhere.
5. – In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Carefully add the breaded egg halves and fry for 2-3 minutes per side, or until golden brown and crispy.
6. – Transfer the fried eggs to a paper towel-lined plate to drain excess oil. Sprinkle with additional paprika and chopped chives.
