Ingredients

– 3 lbs ground venison

– 1 lb ground pork

– 1/2 tsp liquid smoke (optional)

– 32mm natural sausage casing


Instructions

1. – In a large bowl, combine the ground venison, ground pork, salt, black pepper, garlic powder, paprika, and cayenne pepper. Mix well until the seasonings are evenly distributed.

2. – Stuff the seasoned meat mixture into the sausage casing, making sure to pack it in tightly. Tie off the casing at 5-inch intervals to form individual sausages.

3. – Preheat your smoker or oven to 225°F (107°C).

4. – Place the stuffed sausages on a rack or baking sheet and smoke or bake for 2-3 hours, or until the internal temperature reaches 160°F (71°C).

5. – Remove the sausages from the heat and let them cool completely before slicing and serving.
