Ingredients
– 2 lbs white fish fillets (such as cod, halibut, or tilapia), cut into 1-inch pieces
– 1 onion, diced
– 3 carrots, peeled and sliced
– 2 celery stalks, sliced
– 4 cups fish or vegetable broth
– 2 cups diced tomatoes (canned or fresh)
– 2 bay leaves
– 1 tsp dried thyme
– Salt and pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. – In a large pot, sauté the onion, carrots, and celery in a bit of olive oil until softened, about 5-7 minutes.
2. – Add the fish broth, diced tomatoes, bay leaves, and dried thyme. Bring to a simmer.
