Description

These creamy, tangy Deviled Potatoes are the ultimate easy appetizer! Bake up a batch for your next party or gathering, and watch them disappear.


Ingredients

– 2 pounds Yukon Gold potatoes, boiled and halved

– 1/2 cup mayonnaise

– 2 tablespoons Dijon mustard

– 1 teaspoon paprika, plus more for garnish

– 2 tablespoons finely chopped fresh chives, plus more for garnish

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 400°F.

2. Scoop out the centers of the potato halves, leaving about 1/4 inch of potato flesh attached to the skin. Place the potato shells on a baking sheet.

3. In a medium bowl, mix together the scooped-out potato flesh, mayonnaise, Dijon mustard, paprika, chives, salt, and pepper until well combined.

4. Spoon or pipe the deviled potato mixture back into the potato shells.

5. Bake for 15-20 minutes, until heated through and lightly browned on top.

6. Garnish with additional paprika and chives before serving.

Notes

For a creamier texture, add an extra tablespoon of mayonnaise. You can also top the deviled potatoes with crumbled bacon or shredded cheese before baking.
