Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup dill pickle chips, finely chopped

– 1 cup grated parmesan cheese

– 1 cup panko breadcrumbs

– 2 eggs, beaten

– 1 tsp garlic powder

– 1 tsp dried dill

– 1/2 tsp salt

– 1/4 tsp black pepper

Instructions

1. 1. Preheat oven to 400°F (200°C).

2. 2. In a shallow bowl, mix together the parmesan cheese, panko breadcrumbs, garlic powder, dried dill, salt, and pepper.

3. 3. In a separate shallow bowl, beat the eggs.

4. 4. Dip the chicken breasts in the beaten eggs, then coat them evenly in the parmesan-breadcrumb mixture, pressing to adhere.

6. 6. Bake for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown.

7. 7. Serve hot, garnished with extra dill pickle chips if desired.
