Description

Tender, juicy chicken, fluffy rice, and a cool, creamy tzatziki topping come together in this easy Dump And Bake Chicken Tzatziki Rice dish. It’s a quick and delicious one-pan meal that’s perfect for busy weeknights.


Ingredients

– 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes

– 1 cup long-grain white rice

– 1 (14.5 oz) can diced tomatoes, undrained

– 1 cup low-sodium chicken broth

– 1 teaspoon garlic powder

– 1 teaspoon dried oregano

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup plain Greek yogurt

– 1 cucumber, diced

– 2 tablespoons chopped fresh dill

– 1 tablespoon lemon juice


Instructions

1. Preheat oven to 400°F.

2. In a large baking dish, combine the cubed chicken, rice, diced tomatoes with their juices, chicken broth, garlic powder, oregano, salt, and pepper. Stir to mix well.

3. Cover the dish tightly with foil and bake for 30 minutes, or until the chicken is cooked through and the rice is tender.

4. In a small bowl, mix together the Greek yogurt, diced cucumber, fresh dill, and lemon juice to make the tzatziki topping.

5. Remove the baked chicken and rice from the oven and fluff with a fork. Serve immediately, topped with the tzatziki topping.

Notes

For best results, use long-grain white rice. You can also add some chopped kalamata olives or crumbled feta cheese to the tzatziki topping for extra flavor.
