Ingredients

– 2 tablespoons olive oil

– 1 medium onion, diced

– 3 carrots, peeled and sliced

– 3 stalks celery, sliced

– 3 cloves garlic, minced

– 6 cups chicken broth

– 2 cups shredded cooked chicken

– 8 ounces egg noodles

– 2 tablespoons chopped fresh parsley

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, heat the olive oil over medium heat.

2. – Add the onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. – Stir in the garlic and cook for 1 minute, until fragrant.
