Description

This Easy Garlic Scape Pesto is a quick, creamy, and flavorful topping or spread that’s perfect for pasta, bread, and more. Made with fresh garlic scapes, pine nuts, Parmesan, and a touch of lemon, it’s ready in just 5 minutes!


Ingredients

– 1 cup fresh garlic scapes, chopped

– 1/2 cup pine nuts

– 1/2 cup grated Parmesan cheese

– 1/2 cup olive oil

– 2 tablespoons lemon juice

– 1/4 teaspoon salt


Instructions

1. In a food processor, combine the chopped garlic scapes, pine nuts, Parmesan, olive oil, lemon juice, and salt. Process until a smooth, creamy pesto forms.

2. Taste and adjust seasoning as needed, adding more lemon juice, salt, or olive oil to reach your desired consistency and flavor.

3. Use the Easy Garlic Scape Pesto immediately as a topping or spread, or store in an airtight container in the refrigerator for up to 1 week.

Notes

– Try swapping out the pine nuts for walnuts or almonds if desired. – For a thinner consistency, add a bit more olive oil. – This pesto also freezes well for longer storage.
