Description

This easy lasagna soup recipe is a comforting and delicious twist on classic lasagna, made quick and simple for busy weeknights. Enjoy the rich, cheese-infused flavors of lasagna in a hearty, warming soup.


Ingredients

– 1 lb ground beef

– 1 lb Italian sausage

– 1 onion, diced

– 3 cloves garlic, minced

– 1 (28 oz) can diced tomatoes

– 1 (6 oz) can tomato paste

– 4 cups beef or chicken broth

– 1 (15 oz) can tomato sauce

– 2 tsp dried oregano

– 1 tsp dried basil

– 1/2 tsp red pepper flakes (optional)

– 8 oz lasagna noodles, broken into 1-inch pieces

– 1 cup shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, brown the ground beef and Italian sausage over medium-high heat, 5-7 minutes, making sure to crumble the meat as it cooks.

2. – Add the diced onion and minced garlic to the pot and cook for 2-3 minutes, until the onion is translucent.

3. – Stir in the diced tomatoes, tomato paste, beef or chicken broth, tomato sauce, oregano, basil, and red pepper flakes (if using). Bring the mixture to a boil.

4. – Reduce the heat to medium-low and add the broken lasagna noodles. Simmer for 15-20 minutes, stirring occasionally, until the noodles are tender.

5. – Remove the pot from the heat and stir in the mozzarella and Parmesan cheeses. Season with salt and pepper to taste.

6. – Serve the Easy Lasagna Soup hot, garnished with additional Parmesan cheese and fresh basil, if desired.

Notes

– For a creamier soup, stir in 1/2 cup of heavy cream or half-and-half at the end.

– Swap ground turkey or Italian turkey sausage for a leaner version.

– Add sliced mushrooms, spinach, or other veggies to boost the nutrition.
