Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 (28 oz) can crushed tomatoes

– 4 cups beef or chicken broth

– 8 oz lasagna noodles, broken into 1-inch pieces

– 1 tsp dried oregano

– 1 tsp dried basil

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup shredded mozzarella cheese

– 1/4 cup grated Parmesan cheese


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the onion and garlic to the pot and cook for 2-3 minutes, until fragrant.

3. – Pour in the crushed tomatoes and broth. Bring the mixture to a boil.

4. – Add the broken lasagna noodles, oregano, basil, salt, and pepper. Reduce heat and simmer for 15-20 minutes, until the noodles are tender.

5. – Remove from heat and stir in the mozzarella and Parmesan cheeses until melted and incorporated.

6. – Serve hot, garnished with additional cheese if desired.

Notes

– For a creamier soup, stir in 1/2 cup of ricotta cheese at the end.

– Swap ground turkey or Italian sausage for the beef if desired.

– Top with fresh basil, crushed red pepper flakes, or a dollop of pesto for extra flavor.
